This Valentine's Day was really special as I was able to make a delicious treat for my family this year. I was fortunate enough to be contacted by Krista who handles PR for Lucky Leaf, which is a great company that has a yummy selection of premium pie fillings. I was sent withing a day the greatest package including a heart shaped pan, two big cans of Lucky Leaf Premium Cherry Pie Filling, some heart shaped measuring spoons, and a recipe for a Sweetheart Cherry Cake. I admit it, I am not the greatest baker, but once in a while, I really enjoy whipping up something sweet like a cake or some cookies and this was a perfect opportunity being Valentine's Day for me to do just that. I actually made the cake on Valentine's Day and was so surprised that it turned out as well as it did. I love cherries, next to strawberries they are my favorite fruit. Hubby thoroughly enjoyed it and so did little one, with frosting all over her face and hands. The oldest got a chance to try it last night as she spent Valentine's Day with her grandmother. She really loved it too and she's really not a big fan of cherries, but she kept telling me how good this was. I thought it was really melt in your mouth delicious and really easy to make.
Here is the recipe:
SWEETHEART CHERRY CAKE
CHERRY CAKE-
*1 (18.25 oz) dry white cake mix (or your favorite flavor)
*2 Large eggs
*1 tsp. baking powder
*1 tsp. vanilla extract
*1 tsp. almond extract (optional)
*1 (21 oz) can Lucky Leaf Premium Cherry Pie Filling
BUTTERCREAM ICING-
*1 c. butter, softened
*1 tsp. vanilla extract
*1 tsp. almond extract (optional)
*4 c. (1 lb) confectioners' sugar, sifted
*2-4 tbsp milk
PREPARATION-
Preheat oven to 325 degrees F. Lightly grease a 9x2-1/2 inch heart-shaped cake pan. Mix together on medium speed, dry cake mix, eggs, baking powder, both extracts and 1/2 can of the Lucky Leaf Premium Cherry Pie Filling until moistened. Fold in the remaining 1/2 can of cherry pie filling by hand until blended. Batter should appear thick. Pour batter into pan and level with a spatula. Bake for 65-75 minutes, until an inserted toothpick comes out clean. Remove can from oven, and allow it to cool completely in the pan. Invert cake onto a serving platter to decorate.
FOR ICING- Cream together butter and both extracts. Slowly add sifted confectioners' sugar, beating well. Add 2 tbsp milk. Mix well, if needed, continue adding milk 1 tbsp at a time, until icing is smooth and spreadable.
DECORATING IDEA- Icing all sides of the cake, then evenly spoon 1/2 can of the additional cherry pie filling over the top (keeping the pie filling about one inch from the edge of the cake). Pat sliced almonds or mini chocolate chips onto the sides of the iced cake).
*SUBSTITUTIONS- Substitute a standard 13x9 inch pan for the heart-shaped cake pan. Bake at 325 degrees F for 40-45 minutes. Or substitute two 16 pz tubs of any flavor prepared icing for the buttercream recipe above.
I admit when I made my cake, I got a couple of tubs of cream cheese frosting which is my favorite and frosted my cake with that and also added some candy hearts to it. This cake was so pretty that I really didn't want to cut into it, but when I did it was also very colorful inside with the pink color from all of the cherries. Hubby told me next time we make this cake, he wants to use chocolate cake mix, I bet that would be amazing! I tried making my own frosting once and it didn't turn out at all so I was afraid of trying it again and ruining this beautiful cake. If you want a delicious and special treat, you have to try this cake, but make sure to use the Lucky Leaf cherries, these are by far the best cherries that I have ever used.
