Date night....what does that mean around your house?  For us it is having the mother in law or sister in law watch the girls for a couple of hours maybe once a month if we're lucky so the hubby and I can step out and maybe head out for a quick dinner and a couple of drinks.  I can't begin to tell you how long it has been since we had a WHOLE night to ourselves in the peace and quiet of the house.  Date night for us sometimes consists of having a conversation after the girls go to bed, which is something we hardly get to do when they are awake.  So let me tell ya..I was excited when I was sent a "date night" package courtesy of Wanchai Ferry, Romano's Macaroni Grill and My Blog Spark recently.  Dinner time around our house is chaotic in no uncertain terms.  Hubby and I have tried to have a normal conversation over a meal only to be interrupted occasionally by one or both of the girls.  I was excited to try both of the delicious boxed meals that we were sent including the Wanchai Ferry Orange Chicken and the Romano's Macaroni Grill Creamy Basil flavors.


Hubby was anxious to try the Creamy Basil meal, so we decided to make that one first.  We actually did have date night as we had my aunt take the girls over to her house for a few hours so we could enjoy a nice dinner together.  I was also provided a $25 Gift Card to purchase items to make our "date night" extra special.  With both of us being hard working parents, it is sometimes hard to make time for each other, as most of the time we get home from work it is back to the grind trying to get dinner together, bathe the girls, clean up, maybe run laundry, etc.  This was a special occasion and felt real nice to just have a great meal and spend time alone..even if for a few hours.  I purchased some nice candles, a tossed salad mix, a cheesecake, and a loaf of fresh, crusty French Bread to go with the Creamy Basil meal with the gift card.  This was a fun and rewarding experience because we both got to prepare the dinner together, which was SOOO easy to make.  This delicious dinner comes with everything included except the cooked chicken which hubby prepared.  It comes with linguine pasta, sun dried tomatoes, a creamy sauce blend, basil and cheese seasoning and even more cheese with the grated Parmesan and Romano cheese blend to sprinkle on top.  Once the chicken is cooked, you add the ingredients except the pasta which has to be cooked separate.  Once that is finished, you add it to the chicken and sauce to create a satisfying not to mention yummy smelling meal.  This was just enough for the two of us with all of the other fixings that we had gotten.  The Romano's Creamy Basil boxed entrees was so fresh tasting, easy to prepare and we had dinner on the table in no time.  It was great to spend a little time with my hubby, to be able to have  great conversation and a fun dinner.  I can't wait to try the other varieties of these Romano's meals, not to mention the Wanchai Ferry Orange Chicken.  I really love fast and easy meals around my house, especially when I don't have a whole lot of time to cook during the week.  I have a feeling these meals will be a new staple in my home for a while to come.

Spiced Pumpkin Cheesecake Recipe

I found this recipe in a magazine and thought I would share it with all of you!  If you are a lover of pumpkin like me, you will love to try this for the holidays or maybe even now!  If you try this, please let me know how it turned out, I love to hear your thoughts!

Spiced Pumpkin Cheesecake
Makes 16 servings

38 Ginger Snaps, finely crushed
1/4 cup finely chopped pecans
1/4 cup butter, melted
4 pkg (8 oz each) cream cheese, softened
1 cup sugar
1 can (15 oz) pumpkin
1 Tbsp pumpkin pie spice
1 tsp vanilla
4 eggs
1 cup thawed whipped topping
1/2 tsp ground nutmeg

Heat over to 325 F.  Mix crumbs, nuts, and butter, press onto bottom and 1 inch up side of 9 inch springform pan.  Beat cream cheese and sugar with mixer until blended.  Add pumpkin, spice, and vanilla, mix well.  Add eggs 1 at a time, mixing after each just until blended.  Pour into crust.  Bake 1 hour 20 minutes to 1 hour 30 minutes or until center is almost set.  Loosen cake from rim of pan, cool before removing rim.  Refrigerate 4 hours.  Serve with a dollop of Cool Whip and a dusting of nutmeg.

Good Saturday morning all!  Hope your weekend is everything you wanted so far!  We have a fun day planned.  We are heading out to Logan's Roadhouse for a late lunch early dinner, they have this Ultimate Grill deal going on where you can have unlimited steak, chicken, or ribs with two sides for $13.99.  Sounds like a great and tasty deal to me!  Then we are taking the girls to ToysRUs to spend their gift cards that they got for their birthdays over a month ago.  I know, we are a little late on the draw, but have been busy with other things to take them out there.  The oldest has been talking for weeks on what she is going to get, I think she has narrowed it down to five things now!

Pumpkin Pie Fudge Recipe

My aunt made me this fudge this week as a special treat and handed me the recipe, so I wanted to share it with all of you.  I LOVE pumpkin and everything that I have run across that I have tried with pumpkin in t just makes me love it more.  This fudge is no exception and I thought it would be neat to pass it along so that you could make it for your holiday get-togethers too!

Pumpkin Pie Fudge

Ingredients:
1 cup milk
3 cups granulated sugar
3 tablespoons light corn syrup
1/2 cup canned pumpkin
dash of salt
1/2 teaspoon cinnamon
1/2 teaspoon allspice
4 tablesppons margarine
1 teaspoon vanilla extract

Directions:
Butter a 9 x 13 inch baking dish.  Combine milk, sugar, corn syrup, pumpkin and salt in a large pan.  Cook over medium heat until boiling, stirring constantly.  When mixture comes to a full boil, reduce heat and simmer until mixture comes to a softball stage.  Remove from heat.  Beat in cinnamon, allspice, margarine, and vanilla.  Cool, then beat until thick and mixture looses it's gloss.  Spoon into buttered pan and cut into squares when cool and set.

Good Friday morning!  Hope you are all getting ready for a great weekend!  I have to apologize for the lack of work on my blog lately.  I am finding it to be quite a challenge to be a working mommy!  It has been over five years since I have been back in the work force and I am trying to get used to the fact of tackling a 32 hours a week job and then all the tasks at home that need to get done.  There are some nights when I am lucky enough to sit down by 8 and by that time, I am exhausted!  I will get used to it eventually I hope!  Anyways, check out some great Friday Blog Hops and have a wonderful weekend!
